FigAll this talk about figs reminded me of this excellent cake which I had in the North of Scotland many years ago…! Baked by the very religious mother of my girl-friend at the time.
You may ask what has this got to do with Corfu? Well… God is everywhere!!!
This delicious fruit cake is perfect for Sunday tea. The recipe is cleverly devised to send you thumbing through your Bible for the ingredients! The results are divine!

110 gr Jeremiah Ch1 v.11
340 gr Jeremiah Ch.XXIV v.2
340 gr I Chronicles Ch.XII v.40
500 gr Leviticus Ch.II v.2
2 tsp Galacians Ch.V v.9
1 tsp Solomon Ch.IV v.14
Pinch St. Matthew Ch.V v.13
6 Job Ch.XXXIX v.14
340 gr Jeremiah Ch. VI v.20
½ cup Solomon Ch.IV v.11
2 TBLSP I Samuel Ch.XIV v.29

Preheat oven to 180 degrees C and grease and line a 9 inch cake tin. Blanch, peel and chop the almonds. Chop the figs. Sift flour with baking powder, cinnamon and salt. Cream butter and sugar until fluffy.
Gradually mix in beaten eggs, adding a little flour with each addition. Fold in the rest of the flour along with the honey, milk and fruit. Put in a tin and bake for 2 ¼ hours. Cake is ready when a skewer comes out clean!
