ginger beerCORFU GINGER BEER

I certainly don’t want to compete with the already established ginger-beer company here on Corfu belonging to Mr Chimarios but I would like to tell you MY OWN version which does not use yeast and nothing is boiled! Very-very easy, but you must be patient!
In fact I am drinking some right now!
The quantities of the ingredients are crucial for the chemical reactions to take place!
4.5 litres water (3 large water bottles)
6 lemons
1 kgr sugar
1 piece of root ginger with skin ON (this is where the yeast comes from!)
A piece like your two fingers!!
Method
Put the water in a stainless steel pan (plastic will do, but not so good!)
Cut the lemons in half and squeeze the juice by hand-Drop the half lemons inside!
Grate the fresh ginger on the coarse side of the grater and put in the water. When the grating gets dangerously near your fingers, drop the remaining pieces in the pan!
Add sugar (I found that 1 kgr is far too sweet, so put in about 700 grams)
Cover the pan and leave for 24 hours. Taste and see if it needs more sugar!

Bottling

NEVER use bottles bigger than ½ litre. The plastic “small” water bottles will NOT DO! Try some of the small ½ litre mineral water bottles.
The best of course are the 350 ml green beer bottles “GROLSCH” with the wire tops. Unfortunately these are very expensive and the beer is not all that great!!! (I only possess 5!!)

Using a sieve fill your bottles (leaving a space from the top) and leave somewhere for 6 days!
Better put them outside your house (you never know!!) but not in direct sun.
If not careful, the bottles will explode!! (Release the gas daily with plastic bottles). Green wire top bottles? Leave as they are!!!
Now put them in the fridge for a few hours and enjoy, simply made CORFU GINGER BEER!! Aleko’s way!!!
